Focaccia with Tomato and Poppy Seeds. Today in our school of Pizzaioli we prepare a special pizza: It is an OPPIO pizza. The common poppy it is widespread in Italy, it grows spontaneously on the roadsides, along the railways and among the wheat fields. It is a close relative of the opium poppy from which morphine is extracted and the petals and seeds have mild sedative properties.

It is widely used in pastry, in baking and generally in the kitchen, and it is permitted by law as once poppy seeds lose their hallucinogenic properties.

Bored by the heat, in the laboratory of our pizza school, during the course we decided together with Leonel who comes from Argentina and just this week he enrolled in the practical course to become a pizza chef, to "get high" with poppy seeds.

We have prepared a delicious focaccia with thinly sliced ​​raw tomato, of poppy seeds and extra virgin olive oil, salt and rosemary
