First of all, It is important to choose the right flour. In our Silvio Cicchi pizza school, we only use high quality flours, which guarantee optimal consistency and excellent flavour. Flour “00” it is the most common for pizza, but depending on the type of pizza you want to prepare, you can also use wholemeal or special flours.
Leavening and Rest
Leavening is another crucial step. A good dough must rest and rise for the necessary time. This allows the gluten to develop, making the dough elastic and easy to roll out. In our school, we teach leavening techniques that vary from 24 at 48 hours, ensuring a light and digestible dough.
The Perfect Cooking of Pizza
Once the dough is ready, it's time to move on to cooking the pizza. This is a magical moment where all the efforts made so far come to life.

The type of oven used is essential to obtain perfect cooking. Wood-fired ovens are favored for their intense, even heat, but electric or gas ovens can also give excellent results if used correctly. In our pizzeria, we use different types of ovens to teach our students to best manage every situation.
Cooking Temperature and Time
The oven temperature must be very high, around 450-500 degrees Celsius, to cook pizza in just a few minutes, keeping the inside soft and the edge crispy. The cooking time is also crucial and can vary depending on the type of oven and the dough used. During our courses, we teach how to recognize the right time to take the pizza out of the oven, always guaranteeing a perfect result.
