The pizza that I suggest today is one of a kind, delicious and to lick i moustache. It is a classic tomato-based pizza with the addition of anchovies, garlic and rosemary. After cooking, we added fresh rocket and grilled diced potatoes.

I used the verb "we" because as you well know, actually I'm not making the pizzas, but they are made by the students who sign up for my weekly Professional workshops, that come from all over the world. The Pizza Prosciuttella. I remember in my childhood when my mother sent me to the local supermarket by bicycle to buy some cold cuts for a snack, there was a wide selection to choose from, I liked a particular salami: The Prosciuttella. More and more difficult today to find in large supermarkets, the Prosciuttella seems to be slowly disappearing, fewer and fewer specialized companies produce it, for those unfamiliar with it it is a typical salami with a shape that resembles a little mortadella but flat, contains a mix of cooked ham and mortadella.

This week in our pizza school Mr. Nuno came to visit us from the beautiful city of Porto in Portugal. Nuno had never tasted Prosciuttella, being a typical Italian salami. Here is that during the preparation of our morning breakfast I decided to prepare the Prosciuttella pizza.

I invite all gourmands to prepare this pizza next weekend, when you prepare the usual pizza at home. Take care to buy a good cooked ham and a good quality mortadella, are the basic requirements for the success of this pizza.

Another tip I can give you, is not to use mozzarella for the topping of this delicious pizza, but add cooked ham and mortadella only after cooking, perhaps baking a simple marinara with garlic, then add everything.

Pizza With Ham, Peppers and Anchovies. This is a true gourmet pizza, pizza for smokers as a dear friend of mine would say. This week in our school of pizza chefs, Mr. Francisco di Estoril Portugal.

The Portuguese, when we talk about food, they have a lot in common with the Italians, same culture, from cod to anchovies to scottadito, grilled fish, they even have their own version of Sicilian arancini. The common poppy it is widespread in Italy, it grows spontaneously on the roadsides, along the railways and among the wheat fields. It is a close relative of the opium poppy from which morphine is extracted and the petals and seeds have mild sedative properties.

It is widely used in pastry, in baking and generally in the kitchen, and it is permitted by law as once poppy seeds lose their hallucinogenic properties.

900 grams of potatoes
